Frank Cox, known as “The BBQ Pit Engineer”™️ has been building BBQ Smokers as a hobby and business for over 13 years as of 2023.
Armed with a background in the Refrigeration, HVAC, and Food Equipment Industry for 28 years, he has made his living with temperature control, fluid dynamics, and heat transfer.
SmokerBuilder was founded by Frank in 2010 with a small blog and a shop full of tools. The mission was and still is to "Teach people to build a smoker".
In 2011 Frank started SmokerPlans.net and started designing plans for customers to build their own pit from materials they had laying around. SmokerPlans.net has grown and now boasts over 200 sets of SmokerPlans™.
In 2012 he started manufacturing and designing the parts people needed to build their own DIY Smoker for personal use as well as production use for manufacturers.

I rack mine until it burns to embers, then get a couple splits started and get cooking. By then the smoker is preheated and the fire is going to burn consistent.

I bought a 94 gallon propane tank and just wanted to ask what route to take for the paint .. do I have to strip all the old paint off or can I keep it on there .?
I would keep it on there! You can remove it if you want a nice paint job but I normally just run with it

It caused a backdraft! I'm going to say for this convo that at the firebox is + and the smoke stack is - Mine was backwards, I had positive air coming in the smoke stack.
Yeah, my pit had a smoke stack 3" above the grate and was only a ³" pipe that went out 4.5"to a 90° angle then 30-36" high and also 3-4" inside of the smoke chamber, I cut it out like a tumor. 😅

Ok, now I've seen half of it... not gonna make us wait a week to see the rest of the door cutting, are you??? lol Love the videos, great job, guys! Laying out the doors and getting everything perfectly straight with even spacing is so important, a lot of 'home built' smokers out there that cook just fine, but when you step back, you can see the lines of the doors may be slightly off, or the spacing is just a half inch different on one side or the other. Like Aaron talked about when he was designing the skids, having a kind of convention you use (like Aaron's 1/2/4" spacings) makes things a lot more pleasing to the eye. It's definitely a more "professional" look and something that often really "pops" when you step back and look from a few feet away - especially if it's OFF! You don't always notice it when it's perfect, but it really stands out when it's NOT! Great work, guys, thanks for all the hard work detailing this monster build! wish I had a shop and all the right equipment to handle something like this! Oh... and a friend, too! Friends are good! lol

Do you burn more wood when using a baffle plate system?

@@SmokerBuilder okay I got the system made for the Oklahoma Joe highland from bbq mods and I felt like it took me forever to get to 250, I was burning peach half splits and for a pork shoulder it took up a lot of wood compared to other cooks. Any recommendations
I start with charcoal because I don't have a good source of wood so I end up paying a hefty sum for wood every piece is precious lol. But once I have a good coal bed I do the same with my splits. I'll throw one or two on and alternate direction.

Can the exhaust stack on a reverse flow offset draw too well? Folks who use offsets like to discuss draw and how well that happens so I’m curious if that is possible. And if so, what is the result or problem of too much draw on a reverse flow offset smoker?
I have a electric master built smoker and I’m doing homemade deer sausages for the first time need to know how long do I smoke them for and what temperature and what should be the eternal interal temperature and what should I set the vents
If it’s the same tank that’s on other videos it already has a hole cut in it. So you can’t fill it.
That definitely isn't good for a fire place burn up way to quick but for a quick nice hot fire would be perfect

Hello. I have been spraying my 120 gallon with Pam. It just isn’t lasting long. Can I just put the linseed on it like it is or do I have to wash all the Pam off now? Thank you.

Bark on meat is carcinogen but we still eat it. Burn on!
Will it get black, or do I have to paint it?
It will start to get brown first you’ll need to run it pretty hot like 400° or so to start getting darker colors the hotter you run the darker it will get
Cold smoker: Apply canola oil to the firebox and wipe all of the excess off. Apply Walmart mineral oil to the cooking chamber and wipe off the excess. Start your normal fire for a cook. The firebox will reach 1200 degrees. The cooking chamber will reach the smoke point of the mineral oil over the cook and polymerize. Repeat as necessary!

Yes. You are losing heat and smoke by leaks. Lacalock gaskets around doors. $15 fix. Cheers!

Yep....I tell people not to waste money on gasket in a few of my videos I totally agree....not a problem.
